And here is the recipe:
Preheat oven to 170oC/325oF. Line large (20x30cm/8x12inch) tray with baking paper.
In a large bowl, combine:
2 cups rolled oats
1 cup quick oats
1/3 cup almond meal
1/4 cup plain flour
1 tsp mixed spice
1 cup brown sugar
1/2 cup desiccated coconut
2/3 cup of seed/nut combinations - I use peanuts, almonds, pepitas and sunflower seeds
1/3 cup toasted sesame seeds
1/2 cup of raisin/goji berry combined
In a small saucepan melt 200grams (7oz) butter with 175g (6oz) golden syrup (or a combination of maple syrup/honey/golden syrup).
When it has completely melted, stir in 125grams (4.5oz) peanut butter and a splash of vanilla essence.
Stir wet ingredients into dry ingredients using metal spoon.
Press firmly into lined tray.
Bake for 25 minutes, or until golden/firm.
This recipe creates enough to last my partner and I three weeks and stores perfectly in an air-tight container!
